I’ve always been a soil grower but have been considering a switch to hydroponics or aeroponics. What is the most simple and reliable system for someone like myself to start out with?

IMO rockwool is a good stepping-stone to pure water systems, it is less tempermental and can help plants survive first-timer mistakes.
Drip feed seems to be simplest, ebb & flow works well also.

All got their pros and cons.

From my reading I'd say multiflow ebb and flow buckets, once built all the hard work is over apart from washing the hydroton. Also the best option if high temps can be a problem where you live.

The grow tunnell is a good design also.

To get started, how about using a soil less mix? You've got the pots already.
